Dark Chocolate Cherry Bites

These homemade version of the classic Cherry Ripe will impress any chocolate lover.
3/4 cup fresh cherries, pitted
1 Tbsp Pureharvest Rice Malt Syrup
1 1/4 cups desiccated coconut
150 g dark chocolate
Place the pitted cherries, Rice Malt Syrup and desiccated coconut until a food processor and blitz until the mixture is well combined.
Press the mixture firmly into a 20cm tin and place in the freezer to set.
Meanwhile melt the dark chocolate in double boiler.
Once the cherry mixture is nice and firm, cut into bite sized squares.
Using two forks, dip the squares into the melted chocolate to coat them.
Place the chocolate cherry bites onto a baking tray lined with baking paper and pop back into the freezer to set.
Enjoy! These will store in the fridge for around 7 days, or in the freezer for 3 months.
