Fig & Ginger Granola

Granola is one of those recipe that is so good to whip up on a Sunday afternoon so that you always have some on hand throughout the week. This Fig & Ginger version is a personal favourite, but the beauty of granola is that it is so versatile and you can really make any flavour combinations that you love – Apple and Cinnamon is another personal favourite.
2 cup organic rolled oats
1 cup flaked coconut
3/4 cup dried figs, chopped
1/2 cup organic walnuts, roughly chopped
1/2 cup quinoa flakes
2 Tbsp chia seeds
1/4 cup Pureharvest Rice Malt Syrup
1/4 cup Pureharvest Maple Syrup
2-3 Tbsp ground ginger
1 tsp cinnamon
pinch of salt
Preheat the oven to 170 degrees celsius. Line a baking tray with baking paper.
In a large bowl mix together all the dry ingredients
In a seperate, smaller bowl, mix together the wet ingredients until well combined.
Pour the wet ingredients over the dry ingredients and stir thoroughly to ensure that everything is evenly distributed.
Pour the mixture onto the prepared baking tray and place in the oven. Bake for 25-30 minutes, making sure to stir the granola every 10 minutes or so to ensure the outside edges don't burn.
