Preheat the oven to 180⁰C.
Line a baking tray with greaseproof paper.
Combine all the dry ingredients in a medium sized bowl and set aside.
In a large bowl beat together the eggs, coconut oil, maple syrup and vanilla extract. Be patient during this step as it will take 1-2 minutes to full combine.
Add the dry ingredients to the wet and mix together.
Spoon onto the prepared baking tray and top with chopped pecans or chocolate chips.
Bake for 16 minutes or until just set.
