Healthy Choc Chip Cookies

A chocolate chip cookie, a glass of milk (nut milk of course) and an interesting book = the perfect chill time combination! These chocolate chips are packed full of delicious chocolate, including chocolate chips and a gooey centre of COCO².
Preheat oven to 180C and line baking tray with baking paper.
In a small bowl mix together almond meal, flour and baking powder. In a medium sized bowl mix together coconut oil, egg RMS and vanilla.
Add the dry ingredients to the wet ingredients and mix well to form a cookie dough. Add to chocolate chips and mix well to evenly distribute.
Section the dough into small golf-ball size portions. Flatten each ball into a flat disk, creating a small dip in the centre with your finger.
Place a tbsp of coco2 onto each cookie and fold up the sides to encase the coco2 with cookie
Place each ball onto a baking tray and flatten ever so slightly. Bake in the oven for 12-14 minutes.
Remove from the oven and allow to cool on the baking tray before transferring to a wire rack to cool completely.
