Mini Mexican Burgers

These Mexican inspired vegetarian bean burgers are fantastic. You can make a big batch on the weekend and enjoy them for lunch and dinner all weekend, take them for a packed lunch with a load of roast vegetables or whip them up for an easy mid week dinner.
Place all ingredients into a food processor and blitz until well combined.
Shape mixture into 6 even sized mini burgers.
Using a medium sized pan, gently fry the burgers on both sides until nice and golden.
To build the burgers, place a burger, avocado and cabbage slaw onto your choice of bun and top with our vegan chilli mayo.
Serve with grilled corn for the perfect Mexican inspired meal.
