Preheat oven to 180⁰C and line a baking tray with baking paper.
In a medium saucepan, melt the tahini and Rice Malt Syrup, stirring until smooth and mixed. Remove from the heat and stir in the cinnamon, salt and vanilla. Leave to cool slightly.
Once slightly cooled, beat through the egg, add the muesli, flour and baking powder and stir until well combined.
Take about 2 tbsps of dough (depending on what size you want your cookies to be), roll into a ball and flatten slightly onto the baking sheet. It can help to wet your hands to make the rolling slightly easier. Repeat with the rest of the dough.
Bake in the oven until golden brown, around 8-10 minutes. Transfer to a wire rack to cool and enjoy!
