These absolutely stunning popsicles are brought to you by the amazingly talented Arzu Dogan from Vitality and More. These popsicles are super sweet, without any artificial colours or sugars and refreshing. We really hope that you can give them a go.
1 1/2 cups organic rhubarb, stalks only
1 cup organic frozen raspberries
1 1/2 cups filtered water
1/2 cup Pureharvest Maple Syrup Or Pureharvest Rice Malt Syrup
2 tsp fresh ginger, grated
2 tsp orange zest
1/4 cup organic coconut yoghurt
Cook rhubarb, raspberry, maple syrup, zest, ginger and water until rhubarb is soft and tender. Remove from heat and allow it to cool down.
Puree the fruit and press through a sieve to extract only the juice. Add in 1/2 cup of coconut yogurt and blend it all together in your high speed blender or Vitamix until it's all in a liquid form.
Pour into your popsicle moulds and freeze until set. If you have an ice-cream maker then pour it in and let it do the work for you.
