We have a confession to make, we are just a little bit addicted to anything salted caramel right now, and I mean ADDICTED. There’s just something about this sweet and salty combo that gets us every single time, anyone else agree?
These salted caramel mini eggs may not be my best work in terms of food photography or food styling, but boy oh boy do they make up for it in taste! Super simple and super delicious. Give this recipe a go, I promise you won’t be disappointed.
For the caramel filling:
Place all the ingredients into a food processor and blend until a smooth caramel paste forms. Transfer to a bowl and prepare the chocolate
You can either make you own chocolate using our recipe linked in the ingredients or simply buy your favourite vegan dark chocolate from the shops.
Melt the chocolate in a double-bowler over a pot of simmering water.
Pour into the egg moulds making sure to only fill up about 1/3 of the way
Spoon a dollop of caramel onto the chocolate.
Place into the freezer to set. Once set remove from the freezer and now it's time to assemble the eggs.
Using a warm spoon or heated utensil gently melt the edges of each egg. Take two sides of the egg and gentling press together to form one whole egg. Repeat with remaining egg halves and place back into the freezer to set completely.
