Vegan Raw Mint Slice

Mint chocolate has to be one of our favourite flavour combinations. This Raw Mint Slice is our variation of the ever famous After Eight Mints. It is quite decadent so you only need a small mouthful to satisfy those after dinner cravings.
What makes this slice even more appealing is it will keep in the freezer for ages, so you’ll never go an evening unsatisfied 🙂
For the base:
Place all the ingredients for the base in the food processor and blitz until it starts to come together. Using a spoon remove the mixture from the processor and press into a baking tray (roughly 20cm X 20cm) lined with cling film or baking paper so it is easy to remove later on. Place in the fridge to set while you move onto the filling.
For the centre:
Again place all the ingredients for the filling into a food processor and blitz until smooth and creamy. This will take a while so be patient, you might need to scrape down the edges every so often. Once you have a creamy texture, spoon over the top of the base and place in the fridge to set.
For the topping:
Make our clean chocolate recipe or alternatively melt good quality dark chocolate and spread over the top of the set mint slice. Place back into the fridge or freezer - to set up to about 4 hours.
These will keep in the fridge for over a week or in the freezer for up to 3 months.
If you are storing them in the freezer, remove them about 10-15 minutes before you want to serve so they aren't rock hard.
