Wholemeal CrumpetsServes: Makes 15 Prep Time: 5 Minutes + Rising Time Cooking Time: 20 Minutes
There’s nothing better than warm crumpets, and as these ones are wholemeal too, you know they’re full of goodness.
Combine the flour and yeast in a larger bowl. Add the warm water and mix well. Cover with a damp tea-towel and place in a warm place to rise for one hour.
After the mixture has proved for an hour, add the salt and mix well.
Mix the warm milk and bicarb soda together and add to the mixture, stirring to combine.
Heat a heavy based frying pan on a medium heat. Add a teaspoon of coconut oil to melt.
Grease some round egg/crumpet rings with oil and place onto the frying pan. (If you don't have egg/crumpet rings you can simply cook this freely on the frying pan, they just won't have the classic crumpet shape. They will taste just as good though :))
Fill the rings with mixture and cook for about 4 minutes or until holes start appearing and the mixture is almost set.
Turn over and cook for a few more minutes on the other side. Repeat until all the mixture is gone.
Serve warm topped with mixed berries and drizzled with Rice Malt Syrup.
