Are your cupboards looking a little bare at the moment? Are you finding yourself heading into the kitchen and at a loss at what to make with the limited ingredients that you have on hand?
Many of our supermarkets are finding it difficult to keep up with demand as a result of people panic buying leaving many of us struggling to fill our kitchens with the usual groceries. Also as many of us self-isolate and try to stay at home as much as possible it inevitably means we are going to the shops less and less. As a result we are doing our best to make use with what we do have. We are finding ourselves becoming more and more creative in the kitchen and making delicious meals from limited ingredients.
We have so many incredible recipes here on our Pureharvest website and we wanted to compile a short list of ones that we have found ourselves turning to when we are short on ingredients. They can all be easily adapted to include whatever ingredients you may have on hand.
We also want to acknowledge that pasta and rice are used in a number of the recipes we’ve included and we appreciate that they may be difficult to get your hands on. SO please know that you can easily swap these for things such as Bulgur Wheat, Couscous or Quinoa – get creative and less us know what wonderful end results you come up with.
Another great tip for those of us now working from home and trying to make our food last a little bit longer is to make double the amount of dinner each night so there is plenty for left-overs and lunch the next day. Knowing you have lunch ready to go in the fridge during the week while we juggle working from home and having to entertain the kids (as many of us now have them at home with us) is a great time saver and ensures we are eating wholesome healthy food around the clock.
