How To Jazz Up Your Pumpkin Soup
Ahhh… pumpkin soup.
There’s nothing like sitting down to a warm, golden bowl like this.
We like to make ours a little bit creamier by adding some Coco Quench. But even an old favourite can sometimes needs a little jazzing up – so why not mix it up?
Use our Basic Pumpkin Soup recipe as your base + one of these 3 ways to add maximum flavour with minimum tweaking.
#1 Pumpkin Nutmeg Soup with Cranberries
Just by adding a tsp of nutmeg before you add the pumpkin shifts this soup into ultimate comfort cooking mode. Garnish with dried cranberries and chopped parsley or chives for a bit of zing!
#2 Pumpkin, Carrot and Ginger Soup
Swap out the sweet potato in the original recipe for 2 large carrots and add 1cm of freshly grated ginger with the other spices to give freshness and a zingy kick to this soup. Garnish with fresh coriander leaves for a delicious pick me up.
#3 Curried Lentil and Pumpkin Soup
Adding a tsp of garam marsala once the onion has softened and 3/4 cup of washed red lentils along with the pumpkin makes for a hearty and warming meal. Serve with grilled flat bread and a dollop of yoghurt on top.
