Quick & Simple Vegan Weeknight meals

Do you ever find yourself coming home from work, opening the fridge and finding yourself at a loss for what to cook for dinner so just end up resorting to a take-away?

We’ve been in that position more times than we’d like to admit and while take-aways are delicious they aren’t kind to our bank accounts or our health. Now don’t get us wrong, a cheeky take-away every now and then is needed, but resorting to take-aways every night of the week often leaves you feeling unhealthy and your bank account significantly poorer.

So to help you take those pennies and cook more plant based at home we have put together our favourite quick and easy vegan mid week meals.

With a little forward planning along with the recipes in this post you won’t be at a loss of what to cook for dinner after a long day of work.

Simply stock up on the ingredients on a Sunday afternoon and whip up these delicious and healthy meals throughout the working week.

We’re kicking things off with a fresh and summer friendly dinner suggestion, Vietnamese Salad Bowls. These are fantastic and can be easily customisable to suit your preferences. If you don’t like capsicum simply swap it out for another salad vegetable of your choosing. Similarly if you aren’t a fan of tofu you can easily opt for tempeh or even sautéed mushrooms.

Moving away from the summery Vietnamese bowl and into something a bit more hearty, a veggie curry. Curries have always been a weekly go to in our household. They are a fantastic one pot dish and you can pack it full of vegetables when making a curry at home. We love serving it with white rice, brown rice or even quinoa. Make extra and save some for leftovers the next day.
