Preheat the oven to 160°C and oil a baking tray.
In a large bowl, sift together the dry ingredients (flour, spices, bicarb soda, carob powder). In a small saucepan, melt the rice syrup and coconut oil together until runny.
Pour the rice syrup mixture into the dry ingredients and mix well, use your hands to make sure it turns into a smooth dough. Place dough onto a lightly floured surface and roll out into a 1/2 cm thick disk.
Cut the dough into your favourite cookie shapes. The dough will get harder the cooler it becomes, so don't be alarmed if it gets a little more difficult to roll out.
Place the cookie shapes onto the tray and bake for 7 minutes. Remove from the oven, and let partially cool on the tray before transferring to a wire wrack to cool completely.
