These are such a cute and festive idea for shortbread. Jess from Mindful Moose is a superstar and this is her incredible recipe.
You can make the stars and gift them individually as a lovely present over the festive period. Alternatively, build them up into a beautiful shortbread Christmas trees and have them on display on Christmas Day.
Preheat oven to 160C. In a large bowl, whisk together the coconut oil and coconut sugar. Add the almond meal, baking soda and flour. Give that a little mix before adding the almond milk.
Mix until a dough is formed. Place in the fridge for 5 or so minutes to firm up. Roll or press the dough out into about half a cm thickness. Cut your shapes using cookie cutters and place on a lined baking tray.
Bake for 8-10 mins. Let cool. Dunk in cold almond milk and enjoy!
If you want to form your cookies into Christmas trees (makes a great Christmas gift!), use melted dairy free white chocolate to hold each cookie in place.
