A friand… what on earth is that?? Let me explain…. A friand is a mini almond cake which can be pimped and shaped in whatever way you like.

Here we have gone for a classic flavour combination of Cinnamon, Almond and Apple. These friands are the perfect mini dessert or snack to enjoy alongside a cup of tea or a class of milk.

6 tbsp coconut oil / butter,
1 tbsp Pureharvest Rice Malt Syrup,
2 eggs
2 cups almond meal
1/2 cup Pureharvest Activated Almond Milk,
1 tsp cinnamon
1/2 tsp salt
1 apple,
sliced thinly

Preheat your oven to 180 C. Grease a small muffin/friand tray (depending what you have available) with butter or oil and set aside.

In a medium sized bowl combine all the dry ingredients (almond meal, cinnamon and salt).

In a separate bowl mix together the melted coconut oil/butter and rice malt syrup. Once combined add the eggs one at a time.

Add the egg mixture and milk to the dry ingredients and mix well to combine.

Pour into the pre-prepared muffin tray. Top with 3-4 slices of apple and place into the oven.

Bake in the oven for 16-18 minutes or until risen and golden brown.
