Apple Crumble Muffins

We have just created the ultimate winter muffin recipe, they are a real treat. A soft fluffy apple muffin topped with an oat crumble. Small apple pieces mixed into the light fluffy muffin mixture paired with a crunchy crumble on top. All together it creates a beautiful mixture of textures and flavours. A unique and delicious muffin, give this recipe a go.

Muffin batter
2 Tbsp flax meal
1/2 cup apple sauce
1 cup Pureharvest Nature's Soy Original,
1/4 cup vegetable oil
1/3 cup Pureharvest Rice Malt Syrup,
1 tsp apple cider vinegar
2 cups wholemeal self-raising flour
1 tsp bicarb soda
1/2 tsp sea salt
2 Tbsp ground cinnamon
1 cup chopped apple
Crumble topping
1/4 cup flour
1/4 cup rolled oats
2 Tbsp Pureharvest Rice Malt Syrup,
2 tbsp coconut oil

Preheat the oven to 175C fan 

forced and line a muffin tin with muffin cases or reusable silicone cases.

Prepare the flax egg by mixing 2 tbsp flax meal with 6 tbsp water. Allow to sit for 5 minutes.

While the flax meal is thickening make the crumble topping. Mix together all the ingredients for the crumble in a small bowl until evenly combined and set aside.

In a large bowl, mix together the apple sauce, vegetable oil, rice malt syrup and apple cider vinegar. Leave to one side.

In another bowl whisk together the flour, bicarb soda, cinnamon and sea salt.

Add the flax egg to the wet ingredients and stir to combine. Add the flour mixture and gently incorporate until you have a smooth batter but be careful not to over mix here.

Sprinkle the crumble mixture on top of the muffins and now it's time to bake. Bake for 35-40 minutes .

Remove from the oven and allow to cool slightly before taking out of the muffin tin and cool completely.
