What’s wonderfully good for you, quick to make and oh so delicious? You guessed it, miso soup! Perfect as a start or an accompaniment to any meal, this Basic Miso Soup recipe is the ultimate all-rounder. But simply by adding vegetables, fish, tofu or noodles you can transform it into a delightful meal.
5 cups water
1 kombu 4 inch piece
2–3 shitake mushrooms broken into small pieces
1 cup greens finely chopped (watercress is lovely in this soup)
5 tsp miso approx 1 per cup of liquid
Bring the water, kombu and shitake to the boil and simmer for 20 minutes.
Remove the kombu and add the greens. Dilute the miso in a little of the liquid and return it to pot. Serve hot.
