Cauliflower Rice Salad

Light, fluffy and gluten free, this salad is a quick and easy side – just add your favourite form of protein to make it more substantial. Or, swap out the sultanas for chopped tomato for a gluten free tabbouleh.
1/2 head of cauliflower, blitzed in food processor until it resembles rice
1/2 red onion, finely chopped
1 bunch of parsley, chopped
1 bunch of mint, chopped
1/4 cup Pureharvest Organic Sultanas
Place all salad ingredients into a large bowl.
Place all dressing ingredients into a small jar with a lid, shake until well combined.
Pour dressing over salad and mix until the salad is coated with the dressing.
