Put all ingredients, except for the pears, into a large saucepan and bring to the boil.
Once boiled, reduce heat to a fast simmer and carefully placed pears in water, cut-side down. Leave to poach, turning once halfway through, until most of the liquid has evaporated and begins to foam, around 45 mins.
Pour pears and syrup into a bowl and allow to cool slightly before serving, or storing in the fridge for up to a week.
