If you are anything like us and catch yourself day-dreaming about wandering the streets of Paris with a baguette in one hand and a box of freshly made macaroons from Laduree (a famous French patisserie) in the other, this recipe is for you.
These macaroons are by no means the traditional version, however, for the gluten-free health conscious individuals out there, they tick all the boxes. Think light, fluffy and deliciously indulgent.
Preheat the oven to 180C
Grease or line two baking trays with baking paper
In a medium bowl mix together the coconut, almond meal, baking soda and salt
In a separate bowl mix together the rms, egg whites and coco quench
Combine the wet with the dry ingredients and mix well
Spoon onto a greased baking tray and bake in the oven for 10-15 minutes or until golden brown.
Remove from the oven and let cool on the tray.
Once cooled, remove from the baking tray and drizzle with melted chocolate.
