Fruit & Nut Chocolate Slice

The wonderful thing about this slice is that it is so incredibly versatile, mix it up with various add ins… swap out the almonds for hazelnuts or the dried fruit for seeds. Whatever your favourite fruits and nuts use them to create a wonderful little chocolate cluster of goodness.

100 g coconut oil, melted
75 g cacao
125 ml Pureharvest Rice Malt Syrup,
50 g almonds, roughly chopped
50 g dried fruit, roughly chopped
50 g coconut flakes
1 tsp vanilla extract
1/4 tsp sea salt
50 g freeze dried raspberries / dried fruit

Line a 20X10 cm baking tray / container with baking paper or beeswax wraps. Mix the melted coconut oil, rice malt syrup and cacao together until they form a smooth, silky texture with no lumps. Add the roughly chopped nuts, dried fruit and flaked coconut. Pour this mixture into the prepared baking tray. Smooth out the top with a spoon. Sprinkle with the freeze dried fruit and place in the fridge to set, about an hour. Cut into small squares and serve.

This slice will keep in the fridge for 1-2 weeks or in the freezer for a few months.
