Gluten Free Choc Brownies

I think it’s safe to say that chocolate brownies are a house hold favourite all around the world. There’s something so satisfying about biting into a little morsel of chocolatey goodness. However these brownies are of the vegan kind but we promise they are just as good, perhaps even better, than the regular version.

- Dry Ingredients
1/2 cup almond meal
1/2 cup cacao
3/4 tsp baking powder
pinch of salt
- Wet Ingredients
1/2 cup coconut oil
1/3 cup coconut sugar
1/4 cup Pureharvest Rice Malt Syrup
1/4 tsp vanilla
2 chia eggs, (2 tbsp chia seeds + 6 tbsp water)
Preheat the oven to 175 C and line a baking dish with baking paper.
Combine the chia seeds and water and set aside.
In a bowl sift together the dry ingredients, set aside.
In a large bowl mix together the melted coconut oil, coconut sugar, rice malt syrup and vanilla. The warm coconut oil should help to melt the coconut sugar. Add the chia eggs and mix together.
Add the sifted dry ingredients to the wet ingredients and stir to combine.
Pour the batter into the prepared baking dish and smooth over the top with a spatula.
Place into the preheated oven and bake for 18-20 minutes or until just cooked. The sides of the brownie should start to harden and pull away from the edges, the centre should still be slightly soft.
Remove from the oven and allow to cool completely in the baking dish before removing.
Cut into about 16 small squares and enjoy! These brownies will keep in the cupboard/fridge for up to a week.
