Gluten Free Orange Polenta Cake

Zesty, moist and gluten free, our Orange Polenta Cake is an Italian favourite. Perfect with a cup of tea for when you need a little pick me up!
Preheat the oven to 180°C and grease a round cake tin roughly 20-23 cm in diameter.
In a medium sized bowl, combine the dry ingredients.
In a separate large bowl, whisk together the oil and rice malt syrup until it lightens in colour. Slowly add the eggs one at a time, making sure each is well beaten and combined before adding the next.
Add the orange zest, juice and vanilla to the wet mixture. Slowly incorporate the dry mixture into the wet mixture in small batches.
Pour the mixture into prepared cake tin and place in the oven for 40 minutes, or until golden brown and a skewer inserted into the center comes out clean.
