Apple Pie has to be one of our favourite homely desserts? There is something so comforting about the warm apple filling and crumbly pie case that makes for the perfect dessert!
This vegan take on the traditional apple pie will be sure to impress all your friends and family
Preheat the oven to 200C
Peel the apples, cut into quarters, core, then cut into thick slices. Squeeze the lemon juice over the apples as you cut them to prevent browning. Place apples in a large saucepan along with the cinnamon and 1/4 cup water. Cover with a lid and cook over a low heat for 20-30 minutes or until soft. Once cooked, remove from the heat and set aside to cool.
Meanwhile, to make the pastry, sift the flour into a large bowl and add the butter. Using your fingers, rub the coconut oil/butter into the flour until you achieve a breadcrumb like consistency. Add 3-6 Tbsp of Coco Quench, 1 Tbsp at a time until the mixture comes together in a ball. Wrap in cling film and chill in the fridge for 30 minutes.
Once chilled, roll out the pastry onto a floured work surface until it is large enough to cover a 20cm pie dish.
Using a rolling pin, carefully lift the pastry and roll it over the top of the apple mixture. Trim off any excess and press the edges against the dish to seal.
Bake in the oven for 25-30 minutes until the pastry is golden. Serve warm o its own or with homemade custard of natural yoghurt.
