Who’s favourite ice cream was Neapolitan ice cream when they were younger? Or even now? I love it, you get a bit of everything… chocolate, vanilla and strawberry all at the same time? Yes please!
This coconut slice is inspired by the Neapolitan flavours. It is a coconut based slice, that is made up of a chocolate layer, a vanilla layer and a raspberry layer. It looks beautiful and tastes even better. It’s also free from dairy, refined cane sugar and additives.
If you’re a fan of coconut you MUST give this a go, it’s a game changer.
For the chocolate layer:
Place all the ingredients into a food process and process on a medium speed until a relatively smooth mixture is formed, this should take about 2-5 minutes depending on the strength of your food processor. Spoon the mixture into a container (about 10x10cm) lined with some baking paper or beeswax wraps and press down firmly with your fingers. Place this into the freezer while you prepare the vanilla layer.
For the vanilla layer:
Again, place all the ingredients into a food processor and process until smooth. Spoon on top of the chocolate layer and place back in the freezer while you prepare the top layer, the raspberry layer.
For the raspberry layer:
Repeat what you did for both the chocolate and vanilla layers. Spoon the raspberry on top of the vanilla layer and place back in the freezer for the final set, about 15 minutes. Once the mixture has reached the desired firmness, remove from freezer, cut into squares and enjoy.
If you prefer to have it slightly softer, simply remove it from the freezer and allow to defrost slightly at room temperature for about 10 minutes before serving.
