This Orange and Cinnamon granola is the perfect recipe to whip up on a weekend and enjoy with some yoghurt and fruit for the rest of the week. It keeps incredibly well in the pantry in a big jar and is far more delicious and nutritious than shop bought granolas that are generally loaded with added sugar.
Made using our Pureharvest Rice Malt Syrup, this recipe is low in fructose and full of healthy, natural fats from the nuts and oats. Oats are a great carbohydrate source, and paired with our non-dairy milks or some yoghurt this granola will make the perfect breakfast!
4 cups rolled oats
2 cups mixed raw nuts slivered almonds, cashews, walnuts, pepitas and sunflower seeds
zest of one orange
1/2 cup Pureharvest Rice Malt Syrup
2 1/2 tsp ground cinnamon
1 tbsp coconut oil
2 tbsp nut butter, any kind
small pinch salt
Preheat oven to 180°C (fan-forced). For this recipe, all the mixing happens in your baking tray. The size that I use is 26cmx34cm (with a depth of 6cm).
Measure out 4 cups of rolled oats and tip them into the baking tray.
Measure out 2 cups of raw, mixed nuts. I filled one cup with whole almonds, cashews and walnuts - then partially crushed them in the mortar and pestle, before adding to the rolled oats. The second cup I filled with slivered almonds, pepitas and sunflower seeds, and added them whole to the oats. Feel free to experiment with your favourite nut and seed combinations.
Mix the oats, nuts and seeds together, and set them aside.
In a small, microwave-proof bowl, add the zest of 1 orange, 2 1/2 teaspoons of ground cinnamon, 1/2 cup of Pureharvest Rice Malt Syrup, 1 tablespoon of coconut oil, 2 tablespoons of nut butter and a small pinch of salt.
Microwave on high for 30-40 seconds (or until ingredients start to melt together), then give them a stir to properly combine.
Pour the liquid all over the oat mix and use a spoon to stir through. Ideally, you want to coat all of the oats and see clusters forming.
Bake for 10 minutes, stir the granola gently, then bake for another 10 minutes (or until golden brown.
Take the granola out of the oven and allow it to cool for at least 20 minutes - this will mean that those lovely, crunchy clusters stay together.
Once cool, scoop your Orange & Cinnamon Granola into an airtight jar or container. Store it in the pantry. I love serving it on top of fruit and coconut yogurt, or on my morning smoothie bowl.
