These tarts will impress all your family and friends. They look and taste spectacular without taking hours slaving away in the kitchen. We opted to use pre-made puff pastry as there are so many amazing brands that have traditional, vegan and gluten free versions so there is an option for everyone. However, if you have the time and dedication please feel free to make your own from home, it will make the tarts EXTRA special.
Preheat the oven to 190C and roll out the puff pastry into 1/2 cm thick and cut into 6 rectangles.
Place rectangles into fridge to chill slightly while you prepare the filing and peaches.
Next up, make filling by mixing all ingredients together, leave to the side while you prepare the peaches. Cut up each peach into 8-12 pieces.
Take the pastry out of the fridge and spoon a large tablespoon of filling into the centre of each and smooth out with the back of the spoon. Make sure to leave about a 1/2-1 cm border around the edge.
Place the peaches on top in a pretty pattern. Gently fold and crinkle the edges of the puff pastry so they are a bit raised.
Bake in the oven for 35-45 minutes or until the peaches and pastry are golden and pastry is cooked through.
