Peanut Butter Brownies

Vegan plant based brownies made from wholefoods and organic ingredients. We absolutely love brownies… I mean who doesn’t… But when there’s peanut butter swirled through the top it’s even better. Give these soft, dense brownies a try – we promise you won’t be disappointed.

3 flax eggs (3 tbsp flaxmeal + 9 tbsp Oat Milk/Water)
1/2 cup coconut oil, melted
1 cup coconut sugar
1/2 cup Pureharvest Rice Malt Syrup,
1 tsp vanilla extract
1 cup plain flour
1/2 cup cacao powder
1/2 cup almond meal
1/2 tsp baking powder
1/2 tsp sea salt
100 g dark chocolate chips
1/3 cup smooth peanut butter

Make the flax meal by mixing together the ground flax meal and water and set aside to thicken.

Preheat the oven to 180 C. Grease and line a baking tray (roughly 20cmX20cm) with baking paper.

Mix together the melted coconut oil, coconut sugar, rice malt syrup and vanilla in a bowl. Add the flax eggs and whisk to combine.

Sift together the flour, cacao powder, almond meal, baking powder and sea salt together in a seperate bowl.

Fold through the flour mixture with the wet mixture. Mix through the chocolate chips. Pour into the prepared baking tray.

Melt the peanut butter in the microwave or in a bain-marie (bowl over simmering water) until warm and runny. Spoon dollops onto the brownie mixture and using a knife/skewer create a swirl of peanut butter on the top of the brownie.

Baking in the oven for 20-25 mins or until the centre of the brownie no longer wobbles. Be careful not to over bake as it will result in a dry brownie.
