Nothing says Autumn like the delicious mellow flavour of pears – and what better (and simpler) way to celebrate them than with an Upside Down Cake. Thanks to the almond meal and buckwheat which gives this cake a lovely nutty flavour, it’s also a gluten free treat.
Preheat oven to 180ºC and grease a 20cm springform cake pan. Slice pears into 1/2 cm thick slices and arrange on the bottom of the pan.
In a large mixing bowl, whisk together the almond meal, buckwheat flour, baking powder, salt, cinnamon and nutmeg.
In another bowl, beat the eggs then add maple syrup, coconut oil and vanilla and whisk well.
Pour the wet ingredients into the dry and stir well to combine, then over the top of the pears in the cake tin.
Bake in the oven for 40 minutes or until cooked through and golden. Once cake has cooled, invert onto a plate to serve.
