Plum and Almond Slice

This gluten-free treat is a fool-proof recipe, feel free to substitute your favourite type of fruit but I particularly love the taste of plums.
Preheat oven to 180⁰C.
In a medium sized bowl combine the almond meal, baking soda and salt. Set aside.
In a large bowl, whisk together the maple syrup, Rice Malt Syrup, melted coconut oil, vanilla and eggs until well combined.
Add the dry ingredients to the wet ingredients and mix well.
Pour the mixture into a square/rectangular baking tray (around 20 x 20cm).
Lay the sliced plum evenly across the whole cake and place into the oven.
Bake for 30-40 minutes or until a skewer inserted into the centre comes out clean.
