Raw Lamington Bites

The perfect ratio of coconut, jam and chocolate. These raw Lamington bites are perfect for on the go. They provide a wonderful alternative to traditional Lamingtons, while maintaining traditional flavours.

Raw, vegan and made using just a little natural sweetener in the form of Rice Malt Syrup and Jam they are a fantastic healthy treat to enjoy anywhere, anytime.

Balls
1 cup cashews
1/2 cup coconut flour
1/4 cup desiccated coconut
2 Tbsp Pureharvest Coco Quench,
1/3 cup Pureharvest Rice Malt Syrup,
Coating
4 Tbsp Pureharvest Coco² Original,
1/2 cup coconut

Place all the ingredients for the ball (NOT the jam or coating ingredients) into a food processor and blitz until it begins to come together to form a dough like mixture.

Get a bowl of warm water ready. Slightly dampen your hands so that the mixture doesn't stick to your hands and roll into walnut sized balls. It should make 10-12 balls.

Stick your thumb into the centre of the ball and create a hollow section, spoon in a dollop of chia jam and close the top around the filling. Roll and reshape into a ball and place to the side. Repeat for the remaining balls.

Place the balls into the freezer while you prepare the chocolate.

Melt the chocolate, roll the balls in the melted chocolate to coat evenly. Sprinkle the desiccated coconut over the chocolate coated ball and place onto some baking paper/beeswax wrap. Repeat for the remaining balls.

Place the finished bliss balls into the fridge. They will keep in the fridge for about a week.
