This recipe is so simple and it doesn’t have any hidden ingredients like the shop bought versions. So many breakfast cereals come packed full of unnecessary ingredients. This homemade version is quick easy and incredibly versatile. Whip up a batch on the weekend and you’ll have tasty granola ready to go all week. We love enjoying it on top of coconut yoghurt and fresh fruit or simply on it’s own with a general amount of Pureharveset Almond Quench.
Mix the oats, nuts, protein powder, cinnamon and salt together in a bowl. Set aside.
Gently heat the oil and rice malt syrup together in a small saucepan until just warm. Pour over the dry mixture and mix well with a wooden spoon.
Spread evenly onto a baking tray and bake at 175C for 20 minutes, mixing half way through to ensure even baking. Stir in the fruit immediately after taking out of the oven while still hot. Allow to cool completely and then store in an airtight container.
Notes: this recipe works perfectly without the protein powder so feel free to not use it if you don't have any on hand. Alternatively you could also substitute the protein powder for almond meal.
