When you come home from work and you’re hungry NOW!

What do you do?

Order take away? Eat hummus straight from the tub? Or just collapse in a heap because it’s all too hard?

Here’s our solution to stop the hunger panic – ready in minutes, full of colour, flavour and all the good things veggies can provide. It’s just what you need for a quick, summery weeknight meal.

2 small carrots
cut into matchsticks
1 head broccoli
in florets
1/2 red capsicum
thinly sliced
kernels of 1 corn cob
1 cup snow peas
3-4 spring onions
cut into 2.5cm lengths
1 tbsp Pureharvest Organic Sesame Oil,
lemon wedge and black sesame seeds to garnish
optional 250g block of tofu*
chopped and fried until evenly browned

In a wok, heat 1 tbsp oil on a medium to high heat, add capsicum, broccoli, carrots and corn with pinch of sea salt and fry for a few minutes.

Cover and cook for another couple of minutes before adding spring onions and snow peas, sautéing until the vegetables are bright in colour (but not for too long, you don't want to over cook them!).

Garnish with toasted black sesame seeds and serve with rice and a wedge of lemon.

*if using tofu, for extra flavour, marinate tofu in 1/3 cup Pureharvest Shoyu or Tamari, 1/2 cup water and 1 tbsp grated ginger for 1 hour before cooking
