Spiced Lentil Rice Paper Rolls

Bare feet in the grass with the sun on your face – is there a better way to enjoy a meal?

And when you’re picnicking out in the fresh air, you want something just as fresh to eat. But at the same time you need something that’s going to last the journey in your basket. Fresh AND sturdy – not possible we hear you say!

But that’s just what these Spiced Lentil Rice Paper Rolls are.

Packed with colourful veggies and deliciously spiced lentils, these little beauties liven up any meal, but as you don’t need a plate or cutlery to enjoy them, they are perfect picnic material. Vegan friendly and gluten free, they are also the type of thing you can bring to a gathering to share – if you’re feeling generous that is 😉

While you can enjoy them as they are, we’ve included two different types of dipping sauce – a tangy Tamari and a creamy Tahini.

Rice Paper Rolls
400 g cooked brown lentils
1 large carrot
1 avocado
thinly sliced
1 handful snowpea sprouts
1 bunch coriander
finely chopped
1 bunch mint
finely chopped
1 red chilli
1-2 tsps Pureharvest Organic Sesame Oilstart with 1 tsp and add to taste,
1 packet rice paper rolls
salt and pepper to taste
Tangy Tamari Dipping Sauce
1 tbsp Pureharvest Organic Tamari,
1 tsp brown rice vinegar
2 tsps fresh ginger juice
1 tsp fresh lime juice
1 tbsp water
Creamy Tahini Dipping Sauce
2 tbsps Pureharvest Tahini,
1 tbsp Pureharvest Organic Apple Cider Vinegar,
1 tsp smoked paprika
1 tbsp water

In a medium sized bowl, mix lentils, chopped herbs, chili, sesame oil, salt and pepper and leave to marinate while you prepare the other ingredients.

Chop and slice all the veggies for the rolls and lay them out within easy reach for assembly. Fill a large bowl with warm water and lay a damp tea towel on your chopping board (this stops the rice paper from sticking). Soak a circle of rice paper in the warm water until just soft - not too long or it will tear easily, about 30-60 secs.

Lay the soft rice paper on the tea towel, fill with some generous spoonfuls of the lentil mix and top with the fresh veggies. Then wrap the roll up like you would a burrito - roll it once over lengthways to secure the filling, then fold in the two shorter ends to seal, then roll lengthways to close.

Repeat with each wrap until you've used all your filling. Store in a sealed container until you're at your favourite picnic spot!

For each dipping sauce, mix together all ingredients, adjust to seasoning to taste and enjoy.
