Fancy a sweet treat that contains NO added sugar?! This carrot cake is your answer. Full of flavour and packed full on wholesome ingredients it will not disappoint on taste, but it will deliver on nutrients and satisfaction.
This is a great one for those of you who are trying to cut down on your sugar and sweet treat intake but don’t want to give up cake altogether, because let’s face it who wants a life without cake? Not me!
Preheat the oven to 180C and grease a 20cm cake tin.
Place the flour, ground almonds, raisins, walnuts, mixed spice and bicarb of soda in a large bowl and mix well.
In another bowl, whisk together the eggs then add oil and milk and stir through. Add the grated carrot and combine.
Add the wet mixture to the flour mixture and stir well.
Pour into the prepared cake tin and bake in the oven for 55-60 minutes or until a skewer inserted into the centre comes out clean.
Serve with plain organic yoghurt if desired.
