Vegan Cauliflower Tacos

Fun and simple recipe that’s great for sharing with the whole family. Simple, natural and wholesome food is always a good idea 🤗

Roasted cauliflower
1/2 large cauliflower
2 tsp garlic granules
1/2 tsp paprika
1 tbsp Pureharvest Organic Extra Virgin Olive Oil,
4 tbsp hot sauce
Fillings
1/2 avocado
1/4 red cabbage
1 red capsicum
2 limes, juiced
Pickled jalapeños
6-8 small wholewheat tortillas
Handfull fresh coriander

Heat the oven to 200C/fan. Cut the cauliflower into bite sized pieces. Tip into a bowl with the garlic granules, paprika and oil and a pinch of salt and pepper. 
Transfer to a baking tray and bake in the oven for 10 minutes. Drizzle the hot sauce over the cauliflower and return to the oven for another 10-15 minutes.

While the cauliflower is baking, prepare the other fillings. Finely slice the avocado, cabbage and capsicum. Cut the lime into wedges.
Right before the cauliflower is cooked, wrap the tortillas in foil and gently heat the oven for about a minute.

Assemble the tacos with the fillings and cauliflower. A squeeze of lime and a dash of hot sauce to finish and garnish with some fresh coriander or parsley. Now it’s just time to eat.

Enjoy straight away. This is the perfect recipe for a mid week meal. Simply prep all the ingredients and place into seperate bowls and have the family make their own tacos at the table.

Note:
Also works really well with hard shell corn tacos
Feel free to add a little vegan mayonnaise too, it’s delicious! 
Guacamole is also a great addition 😋
