A fantastic no bake Christmas treat to have in the fridge or perfect for bringing along to friends houses for any festive gatherings you have coming up this December. Versatile, easy to make and full of festive flavour, you can’t go wrong with this one. Feel free to mix and match the dried fruit and biscuits you use. We love the slight warmth and festive flare the ginger-nut biscuits bring to the tiffin but it would work amazingly well with digestives or hobnobs too.

200 g coconut oil
60 g cacao powder
1/4 cup Pureharvest Rice Malt Syrup,
1/4 cup Pureharvest Maple Syrup,
100 g gluten free ginger nut / digestives / tea biscuits
, crushed into chunks
100 g dried cranberries
50 g pistachio
50 g coconut flakes

Melt the coconut oil. Add the cacao, rice malt syrup and maple syrup to the melted coconut oil and stir to combine.
Add in the biscuits, dried fruit and pistachios and mix together. Pour into a 20x20 dish lined with baking paper / beeswax wrap and place in the fridge to set completely. Once set cut into squares and enjoy with a cup of tea or a festive drink.
