Vegan Ice Cream – Vanilla, Strawberry, Ginger

Blended cashews give this ice cream a delicious creaminess, making a perfect base for flavour experimentation.We’ve given you three of our favourite flavour options – which one do you like best?

Vanilla Ice Cream
1/2 cup cashew butter
1 1/2 cups Pureharvest Coco Quench,
1/4 cup coconut oil
1/2 cup Pureharvest Rice Malt Syrup,
2 tsps vanilla extract
5 tsps freshly squeezed ginger juice
1 punnet fresh strawberries

Place all ingredients into a food processor and blitz until smooth.
Place in the freezer for 1 hour then take it out to stir. Place back in the freezer for a further hour before stirring again.
Place it back into the freezer until you're ready to eat it. Remove from freezer a couple of minutes before serving to soften slightly.
