Vegan Peanut Butter Blondies

Honestly this recipe will change your life!! Ok maybe a little dramatic but… it’s SO good! If you’re a fan of soft, rich, delicious brownies/blondies this recipe is for you. Serve with a side of vegan ice cream… DROOOOLING 🤤

1/3 cup coconut oil
1/2 cup peanut butter
1/4 cup Pureharvest Rice Malt Syrup,
3/4 cup coconut sugar
2 flax eggs *
2 tsp vanilla extract
1/2 cup roasted peanuts, roughly chopped
1 cup gluten free flour
1 cup almond meal
1 tsp baking powder
1/4 cup roasted peanuts

Preheat the oven to 180 and line a square baking dish with parchment paper.

In a saucepan melt together the coconut oil, peanut butter and rice malt syrup until runny. Remove from the heat and add in the coconut sugar. Then add the flax eggs, vanilla and sea salt and mix well. Add the flour, almond meal and baking powder and mix again to combine.

Pour the batter into the prepared baking dish and smooth out the surface. Sprinkle with chopped peanuts.

Bake in the oven for 25-35 minutes or until a skewer inserted comes out clean. The skewer can be greasy but just make sure there's no uncooked batter clinging to it. Allow it to cool slightly in the tray before removing and cooling completely on a wire rack. Cut once its completely cooled and enjoy with a side of vegan vanilla ice cream!

*Note: to make 2 flax eggs mix together 2 tbsp of flax meal with 6 tbsp of non-dairy milk and leave for at least 5 minutes to thicken.
