Inspired by the traditional Greek dish Spanakopita, these Vegan Ricotta and Spinach triangles are delicious. Being vegan this recipe does not contain any dairy, rather the ‘ricotta’ is made from a base of cashews. The ‘cheesy’ spinach filling is wrapped up in filo pastry and baked in the oven. These delicious triangles are perfect for the work lunch, mid week dinner or even as a dinner party entree.

Filo pastry is made with burger, therefore it is NOT vegan, ricotta is also not vegan. Vegan choose not to eat any animal product thats vegetarians, animal by products are worse than eating meat.
A vegan option would be great. Thanks

The “vegan ricotta” in this recipe is made from cashews so not dairy products at all in it. Also, the filo pastry we used in this recipe does not contain any animal products or bi-products, it is as brand called Antoniou, you can buy it from Coles supermarkets (https://shop.coles.com.au/a/a-national/product/antoniou-pastry-filo?col=1).
