I had a request from a friend the other day, “Can you make some vegan cookies that taste just as good as non vegan ones”. My reaction was “OF COURSE!”. But then it got me thinking, why is it that so many of us assume that vegan alternatives are never as good as the non vegan versions? It just doesn’t need to be the case.
These cookies are gluten free, vegan and absolutely DELICIOUS! Everyone will love them whether they are vegan or not.
Preheat the oven to 180C and line a baking tray with baking paper. Prepare your flax eggs by mixing the flax meal and 4 tbsp almond milk together in a small bowl and set aside.
In a medium sized bowl mix together the dry ingredients, except the chocolate. Add the wet ingredients and stir well to combine. Add the chocolate and mix well to distribute evenly.
Place the mixture into the fridge for 15-30 minutes to set chill rolling into balls.
Roll the mixture into 10 even balls and place on the baking tray leaving a good amount of space between them to allow for spreading in the oven.
Bake for 12-15 minutes or until golden brown. The longer you cooked them the harder they will be. For a softer cookie, cook for about 12 minutes.
