Vegetarian Sausage Rolls

These vegetarian sausage rolls are so good they’ve even got the tick of approval from our meat eating friends ???? ????  Give them a go and share them with your friends, we promise they’ll be scoffed down in seconds

1/2 cup walnuts
1/2 cup pecans
1/2 cup organic rolled oats
1 onion,
diced
1/4 cup breadcrumbs
150 g fetta,
crumbed
1 Tbsp Pureharvest Organic Tamari,
2 organic eggs
3 sheets puff pastry
2 Tbsp milk of choice
2 Tbsp sesame seeds

Preheat the oven to 200°C.
Place walnuts, pecans and rolled oats into a food processor or blender and blitz until
they resemble fine breadcrumbs.
In a large bowl, mix nuts, onion, breadcrumbs and feta until combined. Add eggs and tamari and mix until well combined.
Roll out puff pastry to 30cm x 15cm rectangle. Place 1/3 of the filling onto the long edge of the pastry and roll, leaving the join on the bottom. Complete this process until all the filling is used. Place on to a baking tray.
Cut each roll into approx. 6 pieces, ensuring you don’t cut all the way through. Brush with dairy or non dairy milk and sprinkle with sesame seeds.
Bake in the oven for approx. 20 minutes or until sausage rolls are cooked through and crisp and golden on the outside.
Enjoy with a serve of homemade tomato relish or your favourite sauce.
