Giant Peanut Butter Cups

Peanut Butter Filling

• 130 g Peanut Butter
• 25 g Pureharvest Organic Rice Syrup
• 30 g coconut oil, melted
• 1 tsp vanilla

Chocolate Coating

• 100 g coconut oil, melted
• 20 g cacao
• 30 g Pureharvest Organic Rice Syrup

First up, make the chocolate. In a bowl mix together the melted coconut oil, rice malt syrup and cacao. Using a whisk make sure there are no lumps of cacao. Divide this mixture into two, leaving half for later.
Spoon 1/2- 1 tbsp of chocolate into chocolate moulds (we used small silicone muffin cases this time). Place this into the fridge to allow to set while you make the peanut filling.

For the filling mix together the peanut butter, rice malt syrup, coconut oil and vanilla.
Spoon a dollop (roughly 1tbsp) onto the slightly set chocolate.

Pour over the chocolate mixture that you set aside earlier. Place into the fridge to set completely.

Store the freezer and take out a few minutes before consuming. They are soft, creamy and oh so delicious.
