Sweet + Sour Noodles

• 200 g noodles of choice (udon, rice, etc)
• 200 g organic tofu, cubed
• 1 medium carrot, sliced into thin strips
• 1 red capsicum, sliced into thin strips
• 1 spring onion, sliced. Save the green for a garnish

Sauces

• 1/4 cup toasted sesame oil
• 6 tbsp Pureharvest Organic Tamari
• 4 tbsp Pureharvest Organic Honey
• 3 tbsp rice vinegar
• 1 tsp minced ginger
• 1 tsp minced garlic
• 1 tsp tapioca flour / corn starch
• 1/2 tbsp chilli flakes (optional)

1. Cook noodles according to packet instructions.

2. Add all the sauce ingredients into a bowl/jug and mix well until combined.

3. Heat oil in a pan over medium heat. Add in tofu with a pinch of salt. Fry off the tofu for about 10-15 minutes until its gotten golden in colour. Add in capsicum, carrot and spring onion, and sauté for about 5 minutes.

4. Add in cooked noodles and sauce and fry it all together for about 5 minutes until the sauce has thickened.

5. Serve immediately with some chilli flakes and the rest of the spring onion.
