Chocolate Cherry Bites

Base

• 1 cup coconut flour
• 1/2 cup cashew butter
• 1/3 cup rice syrup
• 1/2 tsp sea salt
• 1/2 tsp vanilla

Filling/Coating

• 1 cup frozen cherries
• 1 tbsp rice syrup
• 1 tbsp chia seeds
• 300 grams dark chocolate
• 1 tbs coconut oil

1. Mix the base ingredients together in a bowl until well combined.

2. Press into your desired moulds.

3. Heat the cherries in a pot over medium heat until soft, blend with an immersion blender or regular blender then add chia seeds and syrup and allow to set for 5-10 minutes.

4. Top the base with the cherry jam, place in the freezer to harden (1-2 hours).

5. Melt the dark chocolate and coconut oil, then dip the bites into the chocolate. I like to double dip then drizzle some more over the top. Optional to top with some rose petals.

6. Keep in the fridge, and enjoy!!
