Super creamy and delicious baked cauliflower cheese that works beautifully as a main dish or side dish depending on what you serve it with. It’s a big hit with the kids too and gets an extra dose of vegetables in too.
Preheat oven to 180C.
Sauté leek and garlic in a pan over medium heat until soft and fragrant.
Add cauliflower to a steamer basket or pot of boiling water and cook for 10 minutes until just fork tender.
Add all the cheese sauce ingredients into a high speed blender and blend on high until smooth.
Add the leek and cauliflower to a casserole dish and mix to combine.
Pour the sauce over the cauliflower and leek.
Top with breadcrumbs and parsley. Bake in the oven for 30 minutes, until top is golden and crispy.
