Made with Organic Soy Unsweetened Ingredients Leek, diced 1 clove Garlic, minced 1 cup Frozen peas 1/2 cup Parsley/dill/basil 1/2 cup Kale 1/2 cup Vegetable stock 1 cup PureHarvest Organic Soy Unsweetened 3 tbsp Nutritional Yeast 1 Lemon, zest + juice 1/4 cup Coconut yoghurt salt & peper to taste Instructions Add a little oil to a pan over medium heat. Add in leek and garlic and sauté until soft, about 5-7 minutes. Next, add in the vegetable sock, frozen peas and lemon zest. Stir to combine then add in the soy milk, and nutritional yeast. Bring this to a simmer for a few minutes before adding in the beans and kale. Stir to combine and let this simmer until kale has softened, about 4-5 minutes. Stir in the coconut yoghurt and lemon juice. Let this simmer for a further 5-10 minutes. Take off heat and add in fresh herbs. Serve with some crusty sourdough. Share this recipe Print recipe

Ingredients

Leek, diced
