Lime and Coconut Bars

Coconut and lime is such a classic combination! These bars are so yummy they make the perfect afternoon snack. They are also nut free which means they are a great one for the kids lunch boxes! Made using our all time favourite Coco Quench and Organic Honey you can’t go wrong :)

Ingredients

Base

  • 1 1/2 cups self raising flour
  • 1/4 cup desiccated coconut
  • 2 tsp lime rind
  • 1/2 cup Pureharvest Organic Honey,
  • 1/2 cup coconut oil, melted
  • 1 eggs
  • 1 cup Pureharvest Coco Quench,

Syrup

  • Juice of one lime
  • 1 tbsp Pureharvest Organic Honey,

Glaze

  • 1/2 cup icing sugar
  • 2 tbsp Pureharvest Coco Quench

Instructions

Heat the oven to 160C and line a 8inch x 8inch square baking tin. In a bowl, combine
flour, coconut and lime rind. In a jug whisk together honey, coconut oil, eggs
and coconut quench. Make a well in the centre of the dry ingredients and pour in the
wet ingredients. Stir with a wooden spoon until just combined. Pour the mixture into
the prepared baking tin and bake in the oven for 20mins or until golden and cooked
through.
Meanwhile prepare the syrup. Combine the lime juice and honey in a small
saucepan and bring to the boil. Then reduce to a simmer for 2-3mins, ensuring it
doesn’t burn on the sides!
Remove the cake from the oven; allow to cool for 10mins before removing from tin.
Pour the hot syrup over the cake, allow to cool completely.
Meanwhile prepare the glaze; combine icing sugar and coconut quench 1 tbsp. at a
time until a running glaze has formed. Once the cake is cool, cut into 1 inch x 4inch
bars. And then top with glaze!
