Thin with Quinoa

Ingredients

  • 2 Pureharvest Organic Rice Cakes
  • 2 tbsp beetroot hummus
  • 1/4 cucumber, sliced
  • 20 g vegan feta, crumbled
  • 1 tbsp fresh dill, roughly chopped

Instructions

  1. Spread two rice cakes with a generous dollop of beetroot hummus.

  2. Top with sliced cucumber, crumbled feta and fresh dill.

  3. Finish it off with a little sea salt, black pepper and a sprinkle of paprika.
